I Should Have Followed the Recipe

I made granola last night from a recipe in Gourmet magazine. But I couldn't find raw wheat germ at the grocery store, so I got toasted instead. But it didn't occur to me that if I baked the toasted wheat germ it would be double-toasted until it was already in the oven.

As I suspected, once the granola was cooked, the wheat germ had a slightly burnt taste. But it's just slight, so the granola is still acceptable. But next time I'll either use raw wheat germ, or just put the toasted wheat germ in the mix after the oats and stuff has been baked.
