I like this soup a lot! It's very simple, basically saute some onions in butter, then saute mushrooms in butter and olive oil, mix them together with a piece of broken up whole wheat bread, white wine, and chicken stock, then simmer and puree (use a stick blender and puree right in the pan). Season with salt, pepper, and a pinch of nutmeg and serve with creme fraiche.

It's not terribly filling, so I'm going to have to eat something additional for dinner, but it's a great soup to serve as a starter.
